Experience in Measuring the Meat Quality of Stress-Susceptible Pigsn at least 2 of the 3 probe muscles measured. Thus, for this breed, probe values alone could identify all halothane positive carcasses and the further information gained from pH. measurements was minimal. In this material 89–100% of the halothane positive pigs had an unacceptable meat quality.
