Food allergy and intolerance in infancy,Food allergy includes all the clinical manifestations asspciated with an immunological mechanism, that is, with a sensitization to food allergens or trophallergens, mediated by specific immunoglobulin E (IgE). These allergens are proteins, most often of average molecular mass between 20 and 60 kDa (Bleumink, 1970; Moneret-Vautrin, 1986).
