https://doi.org/10.1007/978-3-662-47970-4-3 fatty acid found in these vegetable oils is α-linolenic acid, an 18 carbon fatty acid with 3 double bonds (C18:3ω3). In contrast, the principal omega-3 fatty acids of fish oils, eicosapentaenoic (C20:5.3) and docosahexaenoic (C22:6.3) acids, have longer carbon chains and are more highly polyunsaturated than α-linolenic acid.
