Crosslinking of Starch,us, the properties of produced crosslinked starch will be different. The crosslinking degree also matters, affecting the product’s properties. The degree of crosslinking is difficult to measure/ calculate directly. However, it can be estimated by measuring the viscosity of the starch paste.
