Die Fette,ster ist diejenige, in der als Alkohol Glycerin und als Säure eine der Fettsäuren von der Buttersäure bis zur Stearinsäure, außerdem Ölsäure gebunden ist. Das Glycerin kann sich als dreiwertiger Alkohol mit drei Molekülen Fettsäure verestern.
