Phytates in Canola/Rapeseedlic problems, and these are discussed elsewhere in the book. Since PA can bind with minerals and proteins and is thought to reduce their bioavailability, studies have also been done to understand its reactions, nutritional effect, processing changes, and removal from rapeseed. This chapter provides an overview of such research.
